Ingredients: 1 cup all-purpose flour (I use whole wheat) 1 teaspoon baking powder 1/2 teaspoon salt 1 cup unsalted butter, softened 2/3 cup unsweetened almond milk 1/3 teaspoon salt 2 tablespoons coconut oil (or coconut milk, coconut cream, or olive oil) 1/4 cup coconut sugar 2 tablespoons maple syrup 1 teaspoon vanilla extract 1 cup marula (fruit) sliced 1/8 teaspoon salt, to taste (optional) Directions: Preheat oven to 425°F.
Line two baking sheets with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
Add in the almond milk, maple syrup, vanilla, and coconut oil.
Stir well until the mixture is smooth and well combined.
In another large bowl (or a food processor), whisk together 1 cup of the flour mixture with the remaining 1/6 cup almond milk.
Add the coconut oil and mix to combine.
In the bowl of a stand mixer, whisk the butter, almond milk and salt until combined.
Add 1 cup coconut oil to the wet ingredients and mix until the dough is smooth.
If the dough feels sticky, add more coconut oil or milk.
Knead the dough on the dough hook until smooth and elastic.
Turn the dough out onto a lightly floured surface.
Form into 1/16-inch-thick round.
Roll each round about 1/32 inch thick.
Place on parchment-lined baking sheets and bake for 25 to 30 minutes.
Remove from the oven and let cool for 10 minutes before slicing.
